Cafe Rio, also known as Cafe Rio Mexican Grill, is a fast food chain that specializes in Mexican cuisine. The founders Steve and Tricia Stanley opened the first six Cafe Rio restaurants in 1997 in St. George, Utah. Seven years later, Bob Nilsen and his team bought them, and expanded them to the 80 locations that exist today. They operate in 11 US states. Unlike many fast food restaurants, Cafe Rio prepares food using fresh not pre-made ingredients based off of recipes from the Rio Grande, Southern Texas, and New Mexico.
